When I cook I always start with an ingredient not with recipe, starting with the ingredient I build a combination of flavors and aroma. I’m obsessed for food pairing, i’m obsessed to find the right balance of the flavors, i’m obsessed to find an healthy direction( i don’t like to use extra salt, i don’t like to use extra fat). Every ingredient has its personality and must be respected and never covered: it means that i prefer to extract the natural flavours and reduce fats and salt. The direction to Tasty-land and Healthy- land is my mission.
